Cranberry Macadamia Relish

This sweet, tangy relish makes the perfect topping for all your favorite holiday dishes. Made from chewy dried cranberries and rich, toasted macadamia nuts, it’s simple to prepare and served warm. Enjoy it with your main course, or drizzle over ice cream or cake for dessert.

Cranberry-macadamia relishMakes 1-1/2 cups

Ingredients

1/4 cup macadamia nuts
1-1/2 cups dried cranberries
2 Tbsp.  lemon juice
2 Tbsp. brown sugar
3/4 cup water
1/4 tsp. sea salt  (optional)
1/4 tsp. freshly ground black pepper
8 chives, finely chopped
1 Tbsp. extra-virgin olive oil

Directions

1. Heat oven to 400 degrees F. Spread macadamia nuts on a baking sheet; toast for 6 minutes.

2. In a small saucepan, combine cranberries, lemon juice, brown sugar, water, sea salt and pepper. Reduce heat; simmer for 20 minutes or until liquid becomes thick like a syrup. Add in toasted macadamia nuts, chives and olive oil. Serve warm.
